You can hide the app on its own separate page of the folder. You can make up to 12 pages in a folder, but you must have at least one app on each page.
I chose one photo to hide from My Photo Stream, then went to the albums tab, and there is no Hidden folder. I rebooted the phone, quit the Photos app and still no Hidden folder. As a test, I did the same thing with one photo from the Photos tab. That created a Hidden folder, but only had one photo in it (the one from my photos tab). Create a folder with all the apps you want to hide away. While the apps are still jiggling, drag the icon one page at a time until you get to a blank page then let go.
